  • 2 medium Yukon Gold potatoes, diced

  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • Additional grated Parmesan cheese
  • Lemon wedges for serving

Instructions

  1. In a bowl, mix olive oil, lemon zest, lemon juice, garlic, harissa, salt, and pepper. Toss chicken pieces in the marinade until well coated.
  2. Heat a skillet over medium-high heat and cook chicken for 4–5 minutes per side until golden and fully cooked. Keep warm.
  3. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté until fragrant.
  4. Stir in heavy cream, Parmesan cheese, whipped feta, harissa paste, and lemon zest. Cook while stirring until the sauce is smooth and slightly thickened. Season with salt and pepper to taste. Keep warm.
  5. Preheat your oven to 400°F (200°C). Toss diced potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper in a mixing bowl.
