Instructions

  1. Prepare vegetables by washing and chopping carrots, dicing onion, and mincing garlic and ginger.
  2. In a large pot, heat olive oil over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and ginger; cook for another minute until fragrant.
  3. Add chopped carrots and vegetable broth to the pot. Bring to a boil, then reduce heat to simmer until carrots are tender, about 15 minutes.
