Ingredients

Scale
  • 5 large egg whites
  • 5 large egg yolks
  • 120 g granulated sugar (divided)
  • 60 g milk
  • 50 g oil
  • 1 teaspoon vanilla extract
  • 100 g cake flour
  • 1 teaspoon baking powder
  • 400 g heavy cream
  • 40 g powdered sugar
  • Fresh strawberries (for decoration)

Instructions

  1. Preheat your oven to 325°F (163°C). Grease two 6-inch round cake pans and line the bottoms with parchment paper.
  2. In a mixing bowl, beat the egg whites and cream of tartar until soft peaks form. Gradually add 100g of granulated sugar until stiff peaks form.
  3. In another bowl, whisk together egg yolks, milk, oil, and vanilla until combined.
  4. Sift cake flour, baking powder, and remaining sugar; fold into the egg yolk mixture.
  5. Gently fold in the beaten egg whites until no streaks remain.
  6. Divide batter between the prepared pans and bake for about 25 minutes or until a toothpick comes out clean. Cool on wire racks.
  7. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  8. Assemble by layering whipped cream and diced strawberries between cake layers; frost the top with more whipped cream and garnish with whole strawberries.
