  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 1/4 cup honey or maple syrup (optional)

Instructions

  1. Prepare the strawberry filling by cooking chopped strawberries with sugar, lemon juice, cornstarch, and vanilla extract over medium heat until thickened.
  2. Preheat your oven to 350°F (175°C), then line an 8×8-inch baking pan with parchment paper.
  3. Make the crumble base by mixing oats, flour, brown sugar, baking powder, salt, cinnamon, cold butter, and vanilla until combined.
  4. Press two-thirds of the crumble mixture into the prepared pan as the base layer. Spread the cooled strawberry filling on top followed by the remaining crumble mixture.
  5. Bake for 35-40 minutes until golden brown and bubbling at the edges.
