Ingredients
Scale
- 2¼ cups all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- ½ cup cold unsalted butter (cubed)
- 6 tablespoons ice water
- ½ cup heavy whipping cream
- 2 (8-ounce) blocks cream cheese (room temperature)
- ⅓ cup granulated sugar
- 2 teaspoons lemon juice
- ½ teaspoon vanilla extract
- 1 pound fresh strawberries (hulled and sliced)
- 1 tablespoon red currant jam (or apricot, or strawberry)
- ½ teaspoon water
Instructions
- Prepare the crust by combining flour, sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Slowly drizzle in ice water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 1 hour.
- Preheat oven to 400°F (200°C). Roll out chilled dough into a 13-inch circle and transfer it to a tart pan, pressing it into the sides and bottom.
- Dock the crust with a fork and line with parchment paper filled with pie weights. Bake for 20 minutes until edges are golden brown. Remove weights and bake for an additional 5-8 minutes until dry.
- Allow crust to cool completely before filling.
- For the filling, whip heavy cream until soft peaks form; mix cream cheese, sugar, lemon juice, and vanilla until smooth. Gently fold in whipped cream.
- Spread filling over cooled crust topped with sliced fresh strawberries glazed with warmed jam mixed with water.
