  • ½ teaspoon water

Instructions

  1. Prepare the crust by combining flour, sugar, and salt in a food processor. Add cold butter and pulse until crumbly. Slowly drizzle in ice water until dough forms. Shape into a disk, wrap in plastic, and refrigerate for 1 hour.
  2. Preheat oven to 400°F (200°C). Roll out chilled dough into a 13-inch circle and transfer it to a tart pan, pressing it into the sides and bottom.
  3. Dock the crust with a fork and line with parchment paper filled with pie weights. Bake for 20 minutes until edges are golden brown. Remove weights and bake for an additional 5-8 minutes until dry.
  4. Allow crust to cool completely before filling.
  5. For the filling, whip heavy cream until soft peaks form; mix cream cheese, sugar, lemon juice, and vanilla until smooth. Gently fold in whipped cream.
  6. Spread filling over cooled crust topped with sliced fresh strawberries glazed with warmed jam mixed with water.
