Ingredients
- 400g pasta
- 2 roasted corn cobs
- 3 green onions
- 1 shallot
- 2 jalapeños
- ½ cup cilantro
- 1 cup cotija cheese
- 1 cup sour cream
- ½ cup mayo
- 3 cloves garlic
- juice and zest of 1 lime
- 1 tsp smoked paprika
- 1 tsp chili powder
- salt & pepper
Instructions
- Roast the corn in a frying pan with olive oil for 10-15 minutes until golden. Remove kernels from cob.
- Boil salted water in a large pot and cook pasta until al dente; strain and set aside.
- Prepare vegetables: slice green onions, mince shallot and jalapeños, crumble cotija cheese.
- Mix dressing ingredients in a bowl until smooth.
- Combine cooked pasta with corn and vegetables in a large bowl. Pour dressing over and mix well.
