Ingredients

Scale
  • ½ cup butter (room temperature)
  • 1⅔ cups sugar
  • 2 eggs
  • 1½ tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 cups diced & peeled apples (about 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In a bowl, mix flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  3. Cream butter and sugar together in another bowl until light and fluffy. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  4. Gradually mix dry ingredients into the creamed mixture until just combined. Fold in diced apples and nuts if using.
  5. Pour batter into prepared pan and bake for 35 to 40 minutes until golden brown.
  6. While baking, prepare caramel sauce by combining brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. After baking, drizzle caramel over the cake and return to the oven for an additional 10 to 15 minutes.
  8. Cool for about fifteen minutes before serving warm or at room temperature.
