Ingredients
- 500 g boneless chicken breast, diced
- 6 tablespoons cornstarch
- 50 ml vegetable oil
- 1 onion, thinly sliced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 6 tablespoons ketchup
- 2 tablespoons cider vinegar
- 6 tablespoons brown sugar
- 1 tablespoon soy sauce
- Grated ginger and garlic
- 432 g tin pineapple pieces (drained)
Instructions
- Coat diced chicken in salt, pepper, and cornstarch.
- Heat oil in a frying pan over medium-high heat and fry chicken until golden brown (8–10 minutes). Set aside on paper towels.
- In the same pan, stir-fry onions and bell peppers for about 5 minutes.
- Mix sauce ingredients in a bowl and pour into the pan with vegetables.
- Add fried chicken back into the pan; stir to coat. Heat through for an additional 3–5 minutes.
