  • 1 onion, thinly sliced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped

  • 2 tablespoons cider vinegar
  • 6 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • Grated ginger and garlic
  • 432 g tin pineapple pieces (drained)

Instructions

  1. Coat diced chicken in salt, pepper, and cornstarch.
  2. Heat oil in a frying pan over medium-high heat and fry chicken until golden brown (8–10 minutes). Set aside on paper towels.
  3. In the same pan, stir-fry onions and bell peppers for about 5 minutes.
  4. Mix sauce ingredients in a bowl and pour into the pan with vegetables.
  5. Add fried chicken back into the pan; stir to coat. Heat through for an additional 3–5 minutes.
