Ingredients

  • 1/4 cup olive oil
  • 1/4 cup fresh lime juice
  • 3 tablespoons brown sugar
  • 1 tablespoon Sriracha
  • 2 cloves garlic (minced)
  • 1 small Thai chile (minced)
  • 1 & 1/2 pounds large shrimp (peeled and deveined)

Instructions

  1. In a resealable plastic bag, combine olive oil, lime juice, brown sugar, Sriracha, minced garlic, minced Thai chile, salt, and pepper. Seal and shake to mix.
  2. Add shrimp to the bag, seal again, and toss to coat. Refrigerate for at least 30 minutes.
  3. Preheat the grill to high (450°F).
  4. Remove shrimp from the bag and transfer marinade to a saucepan; heat until boiling, then simmer briefly.
  5. Thread shrimp onto metal skewers. Oil the grill grates and place skewers on them.
  6. Grill for about 2-3 minutes per side, basting with marinade until shrimp are opaque.
  7. Serve with coconut rice or pineapple cucumber salad.
