Ingredients
- 2 boneless, skinless chicken breasts
- 2 medium Yukon Gold potatoes

- ½ cup roasted cherry tomatoes
- 2 tbsp basil pesto
- 2 tbsp Greek yogurt or cream
- 1 tbsp Parmesan cheese
- 1 tbsp olive oil

- Crushed red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss diced Yukon Gold potatoes with olive oil, minced garlic, fresh rosemary, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until crispy.
- Season chicken breasts with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for about 4-5 minutes on each side until cooked through.
- In a blender, combine roasted cherry tomatoes, basil pesto, Greek yogurt (or cream), olive oil, salt, and pepper; blend until smooth.
