  • Fresh basil or parsley for garnish
  • Extra Parmesan for garnish
  • Crushed red pepper flakes (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss diced Yukon Gold potatoes with olive oil, minced garlic, fresh rosemary, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until crispy.
  3. Season chicken breasts with olive oil, minced garlic, oregano, smoked paprika, salt, and pepper. Grill or pan-sear over medium-high heat for about 4-5 minutes on each side until cooked through.
  4. In a blender, combine roasted cherry tomatoes, basil pesto, Greek yogurt (or cream), olive oil, salt, and pepper; blend until smooth.
  5. Plate the crispy potatoes and top them with grilled chicken bites. Drizzle generously with the creamy pesto sauce.
