- 1 teaspoon bicarbonate of soda
- 1 & 1/2 tablespoons ground cinnamon
- 1 teaspoon ground cloves
- 2 teaspoons ground nutmeg
- 1/2 teaspoon ground ginger
- 400g dairy-free block butter
- 80g dairy-free cream cheese
- 360g icing sugar
- 1 teaspoon ground cinnamon (for frosting)
- Orange food gel
- Cocoa powder
Instructions
- Preheat your oven to 180°C (350°F).
- Combine dairy-free milk and apple cider vinegar in a bowl; let sit for 5 minutes.
- In another bowl, whisk together flour, sugar, baking powder, bicarbonate of soda, and spices.
- Mix dry ingredients into wet mixture until just combined; fold in oil and pumpkin puree.
- Pour batter into a greased 9×13 inch baking pan and bake for 30–35 minutes.
- Allow to cool completely before frosting with a blend of dairy-free butter and cream cheese.
