Ingredients
- 8 boneless, skinless chicken breasts
- 1/2 cup extra virgin olive oil
- 1/3 cup fresh-squeezed lemon juice
- 1 tsp fresh lemon zest
- 1 tsp Greek seasoning
- 1 tsp poultry seasoning
- 1 tsp dried oregano
- Black pepper to taste
Instructions
- Prep the chicken by trimming fat and making small slits to help the marinade penetrate.
- In a Ziploc bag, combine olive oil, lemon juice, lemon zest, Greek seasoning, poultry seasoning, oregano, and black pepper. Add the chicken to the bag and marinate in the refrigerator for 6-8 hours.
- When ready to grill, drain the chicken and let it come to room temperature. Preheat your grill to medium-high heat.
- Grill the chicken for about 4 minutes on one side until grill marks appear; then rotate for crosshatch marks. Flip and cook until firm (4-8 minutes) or until an internal temperature of 165°F is reached.
- Let rest for 5 minutes before serving.
